  • I decided to write Baking with Coconut Flour to share what I have learned from using this unique flour. I'd baked with wheat flour for almost 40 years but when I started on the Gut and Psychology Syndrome Diet (GAPS), that all changed quite drastically. On GAPS, we avoid all grains and starches so whole wheat flour - even soaked - was out, along with many other popular gluten-free baking ingredients like millet flour, rice flour, tapioca starch, xantham gum and potato starch.

    On GAPS we can use nut flours and coconut flour, in moderation. I have worked with both but became intrigued with the way coconut flour behaves, especially its tendency to be so very highly absorbent. At first I followed tried and true recipes, but as I became more familiar I started to experiment to see if I could convert some favorite family baked goods. My very first conversion was the Banana Nut Muffins that my sister and I have made for dozens of years. That buoyed my confidence and from there I converted more recipes and then I began inventing my own.

    One of the things I like about coconut flour is that it typically uses small amounts, which really helped to alleviate my concern about its cost. Yes, coconut flour seems expensive, especially when compared to wheat flour. But most of my recipes call for one-half cup of coconut flour where the recipes which contain wheat flour will typically require four times as much. I also like that my coconut flour baked goods are higher in protein and lower in carbohydrates, so blood sugar levels are less likely to be affected.

    In Baking with Coconut Flour I will tell you about coconut flour, reasons why you might use it and where you can find it. I'll share recipe conversions, explaining each step from whole wheat to coconut flour, along with tips for successfully reproducing other people's recipes and adapting your own favorites. I'll even share some ideas on how to use your products when they flop!
