Please could someone help me here.  I have just  read of  the dangers of fructose from a Mercola site. 
However i have been drinking loads of Water Kefir as a valuable probiotic, but have learnt that the Kefir Grains turn the sugar water into fructose.  Apparently out of a glass of Water Kefir you consume 1.4% of fructose.  Now i would like to know is ALL fructose bad, or is it just the fructose from corn syrup we have to worry about.  Do i throw away my Water Kefir?

I'd think the benefits of the kefir far outweigh the fructose...


I don't know why but I feel that Mercola tends to lean more toward the danger danger side of everything... I stopped getting and reading his newsletter due to the amount of fear mongering that is used. I found it no better than the fear mongering used by un-enlightened doctors.

thanks Yvonne thats encouraging. My husband gave up beer for his health and absolutely loves Water Kefir so imagine my disappointment when i read about the dangers of fructose. I understand corn syrup fructose being deadly but i could not find one site on internet that warned against kefir fructose, even Dom's Kefir site. I'm beginning to agree about Mercola. He has some valuable material no doubt about that, but i guess we have to be balanced. Thanks....
Yes, I can imagine your disappointment. I agree that there is some good stuff on Mercola's site, but the wording and presentation is quite frustrating. Enjoy the kefir!

Where did you read that it converts to fructose? I believe that it converts to alcohol, hence the carbonation.

Yes. i am not an expert, but I've never heard of the kefir organisms changing the sugar to other forms of sugar... just that they consume the sugar and produce alcohol (a small amount) and gas.

We can clearly note the initial amount of sugar and the resulting reduction of more than 80% of the original sugar content. The fact is that the less-than 20% sugar left in the water kefir after a 2 day ferment, is mostly fructose, a mono-saccharide [single sugar]. Fructose is extremely easy to digest, compared to the original sucrose. We also need to consider that the residual syrup in the photo contains some water, so in effect there is even less sugar content compared to what we see in the photo. To explain again, sucrose or regular table sugar, including any sugar-type derived from sugar cane, is made up of a molecule consisting of 2 single sugars-- Glucose and Fructose. This sugar is known as a disaccharide [di means 2, saccharide means sugar= two sugars]. The organisms of SKG break down the disaccharide sucrose into its 2 basic units, glucose and fructose.

I hope I am mixed-up and totally wrong as I love the stuff....

Hi Joy,
It sounds as though this may be correct......so the next thing to determine is exactly how many grams of fructose remain in 1 c. of kefir?
How many cups/day do you drink?

So only 20% of the original sugar remains? And how much kefir would someone need to consume daily to get a beneficial effect? Doesn't sound like it would be much sugar?

 

I am wanting to help rebalance my gut but without triggering my sugar issues, so I'm interested in this subject. I am thinking coconut water kefir, taken with a meal, might be a good option for me.
