Is it true? Today's fruits & veggies= less dense than ancestors'?

I am new to this whole concept of healing the body with food and have become a complete student of it so far. My mind is spinning with information, but I am thrilled to have found something that will help my family. Wish there was more hours in the day to research it all...

 

Anyway, in talking to my husband about it the other day (who is also on board w/everything) he says to me, "I've heard that our food doesn't have NEAR the concentration of vitamins and minerals that it used to have." I stared at him blankly. I'm guessing this makes sense to me, given things like lacking soil, etc. But I wonder if it is true for organically produced food? I've tried looking up stuff on it, but only found this article from Canada. I'm intruiged by the whole thing and wondering what is true, and what is not. Can someone fill me in when you get a chance? :)

This is a fascinating article about the high salicylate issue in many fruits and vegetables. Apparently, vine-ripened product allows the salicylates to breakdown naturally and are replaced by anti-oxidants! The salicylates in the produce inhibit the uptake of many vitamins and minerals making the produce significantly less nutritious. The conclusion is that "Green picked fruit has almost no vitamins and minerals."

This is significant for those with children reacting to salicylates with hyperactivity and vitamin and mineral deficiencies. Buying vine-ripened, local produce will allow the benefits of the produce.

I focus on local sources of produce first, second is organic. We keep a garden year round also. The monocrops and the chemical fertilizing of conventional commercial agriculture limits the nutrient diversity in the soil. Organic farming which nourishes the soil increases the nutrient density of produce. Transporting the produce must be done while 'green', hence fewer nutrients in commercial groceries.

So salicylates in food can be a bad thing for most people or just those w/bodies out of balance, etc.? What foods have high amounts?
