~ Food Has Power ~
Just made a batch of sauerkraut, and despite my initial concerns of it being to salty, it is just right! Whooo hooo! Got Kraut!
I can't believe the probiotic tubs of it sell for $5 in our co-op. Sheesh. It's just cabbage! I used some of the brine from the co-op batch to get some of the lactobacillus in. Not sure if that is useful or not. I was sort of thinking along the lines of yogurt making.
I tasted it today, after adding some dill and one shaved clove of garlic. It is addicting. I could eat it like salad. Must get some healthy sausages or hotdogs, and see what else you can adorn with kraut.

P.S. My husband cleaned out the fridge the other day, and when he came to a half full jar of my sauerkraut he asked, "What's this?" and upon opening it and smelling it, "Oh, this is has gone bad!".
LOL it does stink with the garlic in it. I had to save that jar from him, and explain what it was and what it is good on. My daughter eats it like salad, we all like it on hot dogs, and (hangs head in shame) it really makes a bowl of ramen kick!
LOL, I was so upset when I read the preview of this post, thinking he had tossed your lovely kraut! Glad to hear you rescued your sauerkraut. :-)
