Wow! You have been through a lot. It sounds scary and with losing more foods, it is much more complicated!
Here are my 14 steps for strengthening the immune system and healing leaky gut. I'll make some suggestions based upon your issues. But, it is a start. The most cost effective alternatives are whole food nutrients.
Nutrient dense foods:
homemade bone broth every. single. day. 1cup (MANY nutrients needed for detox, plus minerals) Find a lamb source; it is most tolerated.
homemade milk kefir every. single. day. 1 tablespoon (gradually work up) (B vits, enzymes, most probiotics in proper ph) I would do this unless IgE allergic. Start with 1/8 teaspoon.
green smoothie every. single. day. day 1 cups (any juice plus any dark leafy greens, rotate produce)
lamb or bison liver one ounce per week. (B-vits essential for detox) Puree and freeze and add to smoothies or other foods.
lentils or beans, 1 cup per day. (folate, molybdenum) These are critical for detoxification. Soak the beans overnight with a splash of ACV, pour off the soak water and cook. Make into dips or add to other foods or however she'll enjoy them.
What is the reaction to coconut? What about palm oil? You need fats in her diet, especially Omega 3 and saturated fats and medium chain fatty acids.
fermented CLO, every. single day. (most expensive item) (vit A, D, K, EFAs) This has the essential preformed vit A. Nordic Naturals peach flavored is another option, but not as many vitamins as the fermented, per my understanding.
Bubbies sauerkraut or sauerkraut juice 1 teaspoon every. single. day. (or other raw, fermented food) (probiotics) Before meals is ideal. Or the same amount of raw ACV. We like Braggs.
What is the reaction to nuts? Is it IgE? You need a selenium source for the thyroid and detoxification.
Epsom salts a pinch in water, all day long. (magnesium sulfate)
Celtic Sea Salt a pinch in every glass of water, broth. (microminerals)
Lemon juice, fresh squeezed, a bit in every glass of water or smoothie. (alkalizing to body ph, paradoxically)
Raw local honey, 1 Tbls at bedtime. (helps bifidum bacteria to grow in the gut)
Egg yolk, 1 per day. (nutrients help to detox)
Vit C, 1000mg, two times a day. (helps to detox)
Personally, I'd avoid ALL dairy, unless it is raw A2 dairy source and cultured. Goat's milk is A2, breastmilk is A2. Most cow's milk is A1 and poorly tolerated. I would NOT drink any pasteurized, homogenized, hormone treated milk!!
All soy, unless organic is GMO-soy. I would not use it AT ALL as it changes the microbials in the gut.
WHOLE FOOD probiotics are more effective at surviving stomach acid to the gut. I hope you are not giving her antacids?!
Epsom salt baths, 2 cups in a tub of water daily for 30 minutes.
Total cost about $4 per day.

I did a search on esophagitis and saw this. Have you had any more information?
I have eosinophilic esophagitis and have had to go to a proton pump inhibitor due to multiple ER visits. I also have mood issues and am er, organizationally challenged, and my husband is not at all supportive of my efforts to change my diet or eat foods from the list. I was just wondering if you have tried to follow it or SCD and had any good results?
Jennifer, just start with one thing: green smoothies or Epsom salt baths. Do that regularly and then add another ONE thing, such as Bubbies sauerkraut juice with meals.

Hi, this thread is old and just saw the replies. My daughter is 4.5 now and is doing much better. We switched to a strict paleo diet and also went on a strict supplement regimen(per our MD) and she has improved. One of the things that has helped her is digestive enzymes. We use Houston Enzymes. I started her slow on that. We did the sauerkraut too and other fermented veggies and lots of other things have helped. She gained weight and doing better overall.
Anyway she uses digestive enzymes, probiotics, L-glutamine, melatonin and L-gluthatione transdermal lotion. Oh and Lauricidin. I may have missed a few, if I remember it, I'll post.
She has never been formally diagnosed with EE. We have put off the endoscopy til she's maybe older. Good luck!
