I am confused regarding some research I did regarding candida elimination. Several places recommend replenishing flora with a probiotic designed to survive the stomach digestion process to make it to the intestines. If that is the case, how does yogurt and kefir flora survive?

Kefir and yogurt probiotics are already surviving in an acid medium. Ph of yogurt and kefir is less than 4.5. Also, the many beneficial microbials in kefir (and yogurt) *create* their own acid medium.

In fact, kefir has many microbials which retard growth of pathogenic microbials. "Bacteriocin ST8KF (bacST8KF), produced by Lactobacillus plantarum ST8KF isolated from kefir, inhibits the growth of Enterococcus faecalis E88."

Basically, consumption of kefir could inhibit the growth of Enterococcus faecalis. And listeria and salmonella! http://lib.bioinfo.pl/pmid:17719671

Btw, Kefir helps Bifidum to reproduce in the gut. B. bifidum is the most beneficial form of lactic acid and acetic acid production. It has the ability to:

*Digest lactose
*Ferment indigestible fibers, thereby producing more energy
*Synthesize some vitamins, especially several of the B vitamins
*Assist in mineral absorption, especially iron, calcium, magnesium, and
*Inhibit the growth of Salmonella, Bacillus cereus, Staphylococcus
aureus, Candida albicans, Campylobacter jejuni, Listeria, Shigella, E.
coli and Clostridium by crowding them out and eating the nutrients
they need
*Fight bad bacteria by lowering the intestinal pH through its
production of fatty acids, lactic acid, and acetic acid
*Absorb large quantities of ferrous ions, thereby inhibiting the growth
of bad bacteria that use it for food
*Help decompose nitrosamines (cancer-causing substances) and suppress
the production of nitrosamines in the intestines
*Help lower serum cholesterol
