Change is hard. Not impossible though. I am gearing up to clean up the kitchen and our meals. I need to. How many years of "needing to"? Maybe 3 years of conscious awareness of needing to, and at least 20 of carefree indulgence and reckless consumption (and stress). Thankfully this time around, my husband is also ready so I have his support. I think it helps tremendously not to have to do this by yourself, in a family environment. Watching Fat, Sick, and Nearly Dead, you'll note that those who succeeded were single or went away from their environs, those who had trouble with the radical change were those who stayed at home with husbands who took them out and ate steak and potatoes in front of them.
Last week we made it to the Ho Chin Market in Sacramento, where they get a shipment of specialty baked goods from San Fransisco----buns, stuffed buns, rolls, cakes, bread---all carbs! There is a not so sweet, cream filled bun topped with unsweetened coconut that I LOVE.  In our travels we are either too early or too late, and missed them. Came home with six cream filled buns. Ate two right away. So good, but also two is too much. Later, I tried washing the plates we had put the buns on, and I was horrified to see how impermeable the "cream" was. Not even hot water could soften it. Ewwww! Real whipped cream would have been much better, and I know it does dissolve much better in water than this opaque grease. I wonder what it was made from. It tasted good, despite being clearly synthetic. I can't imagine putting that in my body now. Honest to god. That was gross!

Got my methylated B vitamins and enzymes from iherb, and iron. Yes, eventually I'd like to rely on food, but for now this is good. Next month I will start an allergy elimination diet, which I am not looking forward to, but will do. Meanwhile, I am going through my cookbooks, and all the info I have gathered over the years, like gluten free recipes,  or no-carb breakfast ideas (breakfast without bread scares me), bean cooking times, lists of high magnesium foods, and other lists like that... Making a list of meal ideas, so I don't feel frustrated and deprived when I drop dairy and the familiar grains.

Oh made a spinach salad with baby kale---think I can eat a huge bowl of that, and tinker with the dressing to make it healthier. This is a nice example of something do-able.
