My son and I have a sensitivity to cane sugar but I thought I'd try making our kombucha w/ it anyway with the hopes it wouldn't bother us. It bothers me quite a bit unfortunately. I've been trying to find out whether I can use beet sugar instead but can't find an answer? Does anyone know?

I have three jugs of kombucha that I make for my fam of four and decided to keep our 2 gal dispenser w/ cane and did 2 of our 1 gal jugs w/ beet sugar. That way I don't kill off all of our SCOBYs. I would love to know if someone else has tried beet sugar though and how it turned out.

I have heard about people using beet sugar instead of the cane sugar for kombucha, also I was just reading a blog post, can't remember what blog now, about someone using coconut sugar and I thought that sounded interesting. 

Oh good!  Hopefully it will be ok then.  I assumed that it would since it's the sugar that the SCOBY's want.  You never know though.  ;)  A friend of mine had told me that I could use palm sugar for water kefir but I'm wondering if it would be expensive to do w/ kombucha since it calls for more than the WK.  Hmm...

 

Do you have some good recipe you use for your 2nd kombucha fermentation?

The one that I really liked was some organic pom. juice.  I used about 3 cups of kombucha and 1 cup pom juice, then put a lid on it and let it sit on the counter for about a week, it was delicious and "fizzy".
