~ Food Has Power ~
4-6 servings
Ingredients (Buy Organic)
* 1 cup of wild rice
* 2 Tbsp olive oil
* 1 tsp oregano
* 1 tsp of basil
* 1 large zucchini, sliced and halved
* 2 cups of baby bella mushrooms, sliced
* 1 can of garbanzo beans, drained and rinsed
* 2 tomatoes, chopped or a can of organic diced tomatoes
* 1 Tbsp of Moringa powder
* 1 tsp of pure sea salt
* 1 tsp of red cayenne pepper
Preparation
1. Cook wild rice according to package directions, then set aside.
2. Heat oil in large skillet over medium heat.
3. Stir in oregano and basil and saute' for one minute.
4. Add zucchini, mushrooms and beans, stirring well to coat with oil and herbs.
5. Stir fry for 10 minutes or until zucchini is crisp tender.
6. Add Moringa powder and fresh tomato and stir to heat about 5 more minutes.
7. Mix with wild rice, add red cayenne pepper and sea salt and serve.
*optional add to taco shell or burrito wrap with salsa, black olives and almond mozzarella cheese!
